Just create one set of sessions which goes up to the date you want, then start a new set after the dates where you don't want to run sessions.
This is used in several events businesses now and works well.
We don't have a way of nominating days when no events are held globally because schedules are generally per event anyway. You will find the method we have works well.
You can always copy events and their sessions then alter the event details if you have lots of events.
